Maple Sugaring Season Begins

Sugaring.jpgThe smoke is blowing from the sugar house chimney and the woods are alive with the sound of sap drip, drip, dripping into tin buckets. The cold nights and warm days of the beginning of spring (dare we say it?) have produced perfect conditions for running sap.  The students have been out in the woods emptying buckets and down at the sugar house tending the evaporator and splitting wood.   Soon there will be syrup boiling on the stove and filling up the fridge.  Mark your calendars for the Maple Brunch on April 3rd.
